I keep all the birds parts.....skin, bones etc in freezer bags for soup stock. Doesn't matter if they get freezer burn't. Start with cold water and let simmer for 4-6 hours and strain all the parts and let sit overnight in the fridge and skim the fat. This is the best stock in the world! Oh Yeah!

Since I'm not a turkey fan I do ham smoked on the smoker. If there is any left I have sandwiches and Ham Salad.

Remember when boiling turkey for stock or soups, you want to break open the large bones. this will give you a much richer base to work with.
