Besides the capacity and barrel length options, what is the frame difference between the 2? the newer model 65, that is, and the 608. I don't know much about revolver frames, so any input would be appreciated. Will they fit the same holster, for example?

The 65 is medium frame 38 oz. The 608 is large frame 44 oz. Ported barrel and adjustable sights
