    Pumpkin cookies!

    Ok guys, I know it's not fall yet, but it's my favorite time of the year and I'm craving pumpkin cookies. Actually have a batch baking right now. I love these because they are really good, better for you than most cookies and they only contain 2 ingredients (not including any extras).

    Here's how you make them:

    1 box of spice cake mix
    1 can of canned pumpkin

    (don't make the cake mix per box instructions, the pumpkin and cake mix is all you use)


    Mix, spoon onto greased cookie sheet into the shape of a cookie (they don't spread very much) and bake at 350 for 10-15 minutes or until tooth pick comes out clean.

    Add raisins and or cran-raisins if you like. I also like to put cake frosting on top.

    Those sound really good. Gonna have my wife make me some, and soon as my gums heal-up, and I'm able to chew again. Thanks.

    MissKitty......Now you have gone and done it again and shifted the conversation to one of my favorite topics food.

    During the summer months our Ham Radio Club has picnic meetings at one of the local parks and one of the ladies brought what looked and tasted like spiced pumpkin bars and everyone raved about them and could not believe it when she said they were made with "Pork & Beans"?

    Following the Brats and hotdogs those bars along with my coleslaw seem to be the most popular food there.

    Ahh man, usually food topics are very welcome for me. But pumpkin??? Just nasty, I say! Anything pumpkin is just gross. Yes, I grew up on a farm but I have never liked that stuff. Truth be told I dislike most squashes.
