    Hot and Sweet Chow Chow

    In my garden this year, I had 6 yellow squash plants....about 4 more than I needed. After getting tired of hanging squash in bags on my neighbors front door knobs, and my wife and I making a trip to a local farmers market, and buying a pint of chow chow made from primarily yellow squash, I hunted for a recipe, and found a great one. I made 3.5 pints the first time, and today made another 7 pints. It all turned out great, already gone through a full pint in about 5 days.

    INGREDIENTS

    DIRECTIONS

    • Grate all the vegetables equalling 4 quarts, in a food processor then place in a large container.
    • Add salt, cover with water and allow to stand for 1 hour.
    • While the vegetables are soaking, in a large pot, add the sugar, vinegar and pickling spice.
    • Bring to a boil, reduce heat and simmer.
    • Drain and rinse the vegetables well squeezing out all liquid; add to the pot and bring to a boil.
    • Reduce heat; simmer 30 minutes.
    • Stir frequently.
    • Pour the relish into hot, sterilized pint jars.
    • Wipe rims, place lids and screw bands on fingertip-tight; process 15 minutes in a boiling bath.
    • Remove to a protected surface to cool, undisturbed, for 24 hours.

    I have never tried Chow Chow but my younger son eats it like it's going out of style.
