    Klemkes a Slaton, TX Icon burns down

    My first experience with Klemkes Sausage, was in 1977 when I dropped a little buck off to get processed.

    I have no idea how long they had been in business back then.

    They have long been famous for their German Sausage and Jerky, and many other products. When we have met our Youngest on Trips, we have always taken him a few pounds of assorted flavored German Sausage, my own jerky (I'm really a great jerky maker) and other items he can't get in North Dakota. Before he left home, he was visiting a friend in Vail, Co. and took the friend 12 pounds of Klemke's sausage and 6 quarts of Blue Bell Ice Cream, just to show how high on people's list the Sausage was.

    The cause of the fire is not known at this time. Klemke's is is Slaton, about 20 miles SE of Lubbock, and has always been a mainstay business in the little community. They have a second location in Wolforth, but it may have been strictly a Retail outlet with no meat fabrication on the premises, I don't know. I will be curious to see if they rebuild and reopen.

    Over the past two year, I have become a fan of Raider Red meats, particularly German Sausage. Raider Red meats is a part of the Meat's Lab at Texas Tech. The TTU Meats lab has been for over 25 years, one of the best meat's labs on any University, constantly finishing first in Meat Judging competition. All grads of the Meats lab always have jobs waiting for them when they graduate.

    Klemkes will be missed. Used to have them process our show pigs that turned out to be hogs (losers that is). Made great sausage. I've seen nothing on whether or not they might relocate.

    With the processing facility totally destroyed, Klemke's BBQ place, without a source now, in another location in town is probably done also. Rod is in his 70s and folks around town are speculating as to whether he'll retire or rebuild.
    The business was known as Partain's before it was Klemke's, so the processing facility has a long history.

    I would think the name recognition and his recipies would be worth something. I would approach the family on selling those items, but I also am in my 70's.

    The medical clinic next door that also burned, has been offered use of an economic development building temporarily. Klemke's might find another vacant building, but replacing all the equipment might not be feasible. Time will tell.

    If you're referring to arson, it's nothing like that. Employees were in the building as is usual at the hour this started.
