    I think I'll do some elk chili. I've got lots of ground elk, just got through butchering and, WOW, that's a lotta meat!

    OMG, elk is WONDERFUL!!!!! It's so mild, it's almost sweet. I'm used to venison which can have a tang of wild in it, though if properly aged, it's OK, but it sure the heck ain't ELK! If you ever have a chance to harvest an elk, I'd highly recommend it! That chili was better than beef, let alone venison! I mean I love venison, but boy, I'm looking forward to a little elk backstrap. Talk about your meat candy!

    Which gives me an idea, I need to make some jerky.

    Last night I had a salad. I really wanted a Baconator from Wendys. Still craving it. Tonight I will have the last of the meatloaf from the other day.

    The 2nd amendment is not about hunting or shooting sports, it is about the citizens of this country having the means to protect themselves and the states from the tyranny, oppression, and misery of an over powering government. Modern rifles are a means for the citizens to stand up to an over powering government.

    Yep, left overs for me, too. But, it's chili which is great after the seasonings have had a chance to set in.

    I made a bunch of ramen stock from roasted beef and pork bones, katsuobushi, powdered dried shiitake mushrooms and konbu over the weekend. Now I'm reaping the rewards by serving that with freshly made udon noodles, panko-crusted pork cutlets and soft boiled eggs.

    I froze and vacuum sealed the rest of the broth, so it's the gift that keeps on giving.

    I'm thawing an elk roast and some ground elk. The roast will go in the crock pot tomorrow and the ground will become jerky snacks made with a jerky squirter (looks like a grease gun) and a dehydrator, not real jerky, but good and simple. Can't eat potato chips anymore, diabetic ya know.
