    Try some plain spaghetti dressed with chopped, raw garlic, olive oil, parmesan, S&P. Yum. Goes good with any meat. Toss the garlic on the hot noodles immediately after you drain them. That's all the heat the garlic needs.

    My wife julienned a red and a green pepper, and thin sliced an onion. That was in one prep dish.

    In another were a bunch of scallops and shrimp.

    A third held a small can of pineapple chunks.

    I have a dual fuel Grill Masters grill. One side propane, one side charcoal. I got a good charcoal fire going and when ready put a wire mesh skillet full of veggies on to cook down, stirring them until lightly charred and tender. They went onto the gas side to stay hot.

    Next the scallops and shrimp went into another stir fry basket over charcoal. I would drop the lid to get the temp up, but lift every minute or so to stir the seafood. The best way to tell when the scallops are done is when the shrimp turn pink!

    Tossed the pineapple chunks in with the veggies just to warm. Turned them out into a presentation dish as a base for the shrimp and scallops. Served with wild rice, Trader Joe's Hot and Sweet Chili dipping sauce and crescent rolls.

    Oh, and some cheap white wine....

    A little international flare tonight. Eating my chicken Fajita TV diner with chop sticks. And my wife is bringing me a McDonald's chocolate shake.

    On the menu for tonight is some home grown skillet fried okra very lightly breaded with corn meal (shaken in a plastic bag with corn meal), black eyed peas, Mexican Corn Bread, yard bird and buttermilk.

    I wish resturaunts had fried okra like this, I don't particulary like the heavy breaded okra as it doesn't get crisp enough.

    I place a digital oven probe in the center of my meatloaf and set it to go off at 160°. My meatloaf is covered with foil so it does not start drying out. When the thermometer beeps at 160° I take the foil off, drain the excess fat/grease off, and cover the meatloaf with a few handfuls of shredded cheddar cheese. Another 10 minutes in the oven and the cheese is nice and melted. Than 1-2 minutes under the broiler to slightly brown the cheese around the edges.

    I am not a fan of ketchup on meatloaf.

    A nice summer salad I found, with FRITOS !

    ½ c finely diced DARK GREEN celery (with a bunch of chopped leaves, if possible)
    ½ cup finely diced yellow onion (that’s one medium-large one)
    1/3 bunch cilantro, chopped, (including stems chopped FINELY)
    1 can (10 oz) little black beans, well drained but not rinsed, (frijoles negros)
    ¾ cup small-kernel (IQF) frozen yellow corn.,
    ½ cup shredded cheese ( WalMart Mexican 4-cheese blend works best)
    about a half-cup or maybe less mayonnaise - -the new H J Heinz is pretty good

    mix it all together and refrigerate for an hour.
    Just before serving, crush a bag of “Cheese and Chili Fritos” and stir in, and sprinkle another half-bag over the top. Makes about enough to serve six or so.

    Made this last night and Mrs Flash and I enjoyed it with taquitos (from the freezer, store-bought), fresh tomatoes from our garden, a peeled and sliced cucumber, sour cream, Valentina sauce, and lemonade.


    Next time I do it, I'm thinking, maybe just a sprinkle of some chili powder before the mayonnaise, and maybe sprinkle a little fresh lime juice over it before serving.

    Made buffalo wings served with Bleu cheese with celery and carrots. Did some boneless for the kids. Had pizza yesterday so wings for college football night seemed fitting.

    London Broil charcoaled to black on the outsides and red in the center. My wife prefers the end cuts done medium to medium rare- I like the center slices red in the middle. Baked potatoes, steamed asparagus with Hollandaise sauce, crescent rolls and cheap white wine. A slice of cherry pie later for dessert...
