    Loaded up the smoker this morning with baby back ribs, pork loin roast, and a whole chicken. Threw a few pieces of pecan on it for flavor. Pecan is great on pork.

    Salad and some brown rice rounded it out.

    Yummy.

    New smoker so I'm still trying to figure it out. Old one would have taken an easy eight hours for this much food.
    This one was overdone and somewhat dried out by six hours.

    Tilapia. Wife batters it with some kind of breadcrumb like mix and cooks it in a skillet. Sometimes it's oven baked. Perfectly browned, it's pretty good stuff.

    It's one of those perfect days that are rare, no worries at all so what should I make for dinner? Meatloaf, baked potato and squash casserole. Pretty good fare to top off a great day.
    I want to share a really good squash casserole recipe, try it you will like it.
    Layer sliced zucchini and yellow squash in a baking dish, after each layer add shaker flour, pats of butter, salt and pepper and diced yellow onion. Top with 1 can tomato sauce and bake in the oven for 1 hr at 350, add cheddar cheese to the top and bake for another 10 minutes.

    I turned my leftover homemade chicken soup into a curried chicken soup with seasonings my brother bought me from the UK.
    Damn it was good. Trouble is I will run out before he comes back!

    father's day - - - and our son and his wife brought over T-bone steaks on the grill, . The salad was Black-Seeded Simpson lettuce and Early Scarlet Globe radishes from MY garden. Mrs. Flash's quick potato salad, lime Jell-o, and lemonade. Dessert was watermellon and cantaloupe, served on the deck, where the seeds wouldn't be any issue.
