    Steak!

So, how do you guys like your steaks cooked? Iím talking rare, medium, and done and such. I prefer mine pink in the middle, but Iíll eat it from just barely bloody to almost charred. Raw and hot ainít for me. Otherwise I ainít to picky.

Man, I haven't had a decent steak in about 4 months...new diet and all. I think this weekend, I'm gonna treat myself to one nice and medium rare.

Tell me about it! When I had to change my diet we quit eating in restaurants..i.e. where the majority of the steaks come from. But, I got all my levels under control now, and can afford...maybe even need...to cheat on my diet a bit. So Tx Roadhouse, here I come.

An aged Delmonico rubbed with Everglade Seasoning and seared on a 700+ degree grill, Medium Rare

Medium well-ish. Don't want it still bloody but don't mind the pink in the middle being rosy. I ain't looking for shoe leather, just done enough that we both know it's dead and has been cooked. If it's cooked more done that that, I'm good with that, too, as long as it's not cooked dry.

Seared outside and bright pink in the middle. NY strip is my favorite. Charcoal fire.

Always Medium Rare to Rare for me. Any more cooked than that and I'm not interested. There is actually one more level, Blue Rare which is truly darn near raw. I'm not a fan of that. This is more to my liking.

On the light side of medium, dry marinade for 24 hours and grilled. The cut doesn;t matter much as all of our beef is locally grown, we buy half a beef , and half a big hog every year. The local beef is always tender, tasty and pretty fresh.

Had to Google Delmonico steak...sounds awesome! As do the mashed potatoes that are supposed to accompany it. Thanks for that!
