    We used to do deep dish in the cast iron frying pan with just taking the small frozen bread loaves and pressing it into the cast iron pan after it thawed. Fill with your choice of toppings. Easy cheesy!

    for a thicker crust use a higher gluten flour and put it through several rise cycles and punch down each time. It takes longer for prep, but it makes a major difference.

    A good pizza crust must contain cornmeal. My mom makes crust, I think it pretty closely resembles the recipe above, but when she flours the pan she uses a mix of flour and cornmeal and then dusts the top of the crust with it too.

    For a thicker crust I put the spread out pizza dough in the over set on warm for about 10 minutes. Lets the crust rise up a little before baking.

    I prefer deep dish pizza done in the cast iron skillet with the oven set as hot as it goes.

    I'm trying out Czechbikr's frozen bread dough method as we speak. I found 1# bread dough (three to a pkg) at the Brookshire's. Guess you can tell what kind of town I live in from that....

    I used that for years. The bread came three loaves to a package. I can't remember the name, but it strikes me, the print was red and yellow on the plastic bag.

    The ex-wifey and I used to have a calzone making contest, using different ingredients.

    The best way to make pizza dough is using either a bread machine or a kitchenaid as I don't think many people have a big ole Hobart mixer in their kitchens. I generally just make a basic crust for pizzas but will put the extra time and effort if we're doing calzones.
