Macaroni salad......I looooove macaroni salad, though I like my own the best. Problem is, I can only have mine only for a few weeks......every other year. My wife is Russian and every other year, she goes back for a few weeks to visit friends and family. To them, anything termed a "salad" should be a salad....has to have a variety of vegetables and usually meat chunks in there too. If I make it when my wife's around, I usually come home from work the next day to find she's finished it for me......by adding all the ingredients to transform it to "Rooskie steel"...Russian style. Granted, it's still pretty good but it's not macaroni salad anymore. I like my mac salad kinda' plain, not really crazy about it with onions and celery like most people make it. I just use macaroni, plenty of chopped hardboiled eggs and a full jar of diced bread and butter pickles. For the dressing, I mix Miracle Whip with Duck Sauce (sweet & sour) at about a 4 to 1 3/4 ratio. It looks a little different because it takes on a slight pinkish/yellow tint after mixing but it's really good. Of course, as is the law with macaroni salad, it should be served at room temperature. Naturally, it gets even better as it ages......three days plus is awesome.

Two egg omelet stuffed with some cheddar, ham, and the left-over pico de gallo from last night's tacos. Day-old pico de gallo isn't much use, I like it fresh, but it's fine in omelets. I warm it up pretty good in a small fry pan to get the water out of it before putting it in the omelet.
