Favorite Crock Pot recipes by Jake...

Jake, not to put you on the spot, the Texas heat is upon us which makes great weather for slow cooking without heating up the house. Could you please share some different from the norm Crock Pot Meals with us.

I know this isn't a meal for some, but I LOVE cooked cabbage with a pound of bacon cooked overnight. With some buttermilk cornbread ( with a crispy crust).

I haven't done much crock pot stuff, but I've found that if the first two ingredients you use are chicken or beef broth and a can of creme of mushroom soup, it doesn't really matter what else you put in the pot, it will most likely be good. A 6-11 ounce can of green chilies always peps up chicken in a crock pot, or a casserole or pasta sauce. Tomatoes go real well with any kind of beef or pork, and plenty of sliced onion. Save your potato chip or corn chip crumbs to cover the top and add a little more body to it.

What do you feel hungry for?

Do you spoon off a lot of bacon grease, or just leave it?

Crock Pots are great for Meatloaf in the summer. Simply prep your favorite recipe as you would for oven cooking, roll up a few balls of foil, place in the bottom of the crock and set your meatloaf on top of the foil balls. By raising the meatloaf up it doesn't set in the run off grease as it cooks.

Another idea for the meatloaf it to go ahead and add your side veggie choices direct into the meatloaf. As it cooks nice and slow the favors combine for a special taste. It also cuts down on extra cookware that requires cleaning and reduces the amount of heat in the kitchen.

Layer of onions in the bottom and the biggest pork but you can fit. Season to your taste. Cook on low 8-10 hours. Drain it off an let it cool. Chop it up, mix in your favorite BBQ sauce and heat in the oven. Makes a darn good pulled pork sandwich. I usually make this a two day event.
