    The Wonderful World of Jalapeno Poppers

    Jalapeno peppers hollowed out, stuffed with cheese or cheeses, crab, chicken, dove, quail, guacamole...whatever your little heart and tastebuds want, then wrapped in bacon and cooked on a grill or in a smoker...even just an oven are always a treat.

    I don't think there are any wrong ways to do poppers....possibly just some a little more delicious than others. I cooked up seven today because that was all the Jalapenos I had without having to make a run to the store, and it was just me.

    I also enjoy just plain grilled Jalapenos.

    I did pick up a new trick this week on hollowing them out. Just cut off the stem end, take a potato peeler, rummage it around inside and remove the seeds and heart, then just stuff whatever you want into the cavity and cover that end with bacon and wrap. It's a lot quicker than slicing them end to end, clean the seeds and then stuff, put the halves back together and wrap.

    Today, I just grilled these, so I had to cook off most of the bacon fat in a pan on the grill first before putting the poppers directly on the grill. This keeps from getting a big fire in the grill.

    The last ones I did, I smoked first to get rid of the bacon fat and gain the smoked flavor, but bacon already has smoked flavor anyhow.

    These were quick and simple, stuffed with cream cheese and cheddar, one stuffed with guacamole. I need to get a can of crab meat to stuff some with, I know that would be absolutely great.

    I have decided to concur with Roderick, we need a cooking thread!

    The prettiest, unblemished Jalapenos usually don't have that much heat. If you like the hotter ones, always select the ones with blemishes and rougher skin.

    I grilled some chicken breast last night and have a few cooked breast left over. I think I will go pick up a few jalapeno peppers and stuff them with pulled chicken breast, cheese and do a bacon wrap. I cook on an infrared grill for fire flash isn't a problem with the bacon. Any other suggestion as to what to stuff in there along with the chicken and cheese?
    If you have a difficult job to do....Give it to a lazy man......He will find the easy way to do it.

    I'll bet some pepper jack cheese would be good!

    Think I may mix in a little of that orange colored habanero sause I picked up at Walmart awhile back that someone here on the forum recommended in another post.
    Hmmmm, since we are talking chicken, maybe I'll try a mix of chicken, cheese, onion and Hooters Hot Wing Sauce also.

    I usually make up a few stuffed with different things. One idea I just had is chicken livers, but you might ought to cook the livers a little first. Maybe better yet would be battered and fried chicken livers on the side with some of that orange colored habanero sauce for dipping.
