    Made a 14lb ham butt in the slow cooker with brown sugar and some homemade cherry cordial, kids and I have been eating off of it all weekend. Got the last bit set aside for scalloped potatoes this weekend.

    Tonight will probably be ground pork burgers with bacon, lettuce, and tomato with baked fries and some kind of veg.

    Did this last night it was great

    Ingredients:

    3 Skinless, boneless chicken breasts
    4 tsp of Cajun Seasoning
    4 Tbsp Butter
    1 Red bell pepper, chopped
    1 Green bell pepper, chopped
    2 CUPS Heavy cream
    1/2 tsp Dried basil
    1/2 tsp Lemon pepper
    1/2 tsp Salt
    1/4 tsp Garlic powder
    1/4 tsp Ground black pepper
    8 oz Pene Noodles
    Parmesan Cheese for topping

    Directions:

    Place chicken breasts in the bottom of the slow cooker.
    Cover the chicken with the Cajun seasoning.
    Add the rest of the ingredients EXCEPT the Penne Noodles.
    Cook on high.
    After about 2.5 hours, check the chicken. If it is cooked, shred the chicken.
    Add the Penne noodles at this time.
    Once the Penne noodles are fully cooked (about 30 minutes) it is time to serve.
    Garnish with parmesan.

    Last night was Snowmageddon Part1 (6.5" of white stuff and 35+ MPH winds = nasty drifty roads Part two hits today with more wind and another 5-7" of snow) so I got home late and ended up having to make a quick dinner after feeding the animals and before starting the cold smoker to get the last of the jowl bacon ready for slicing...plowing can wait until tonight Fried up some bacon, fried some eggs over hard in the bacon grease and made bacon egg & colbyjack cheese sandwiches on dark rye.
